Nha Trang Cathedral and the French quarter
The cathedral is a Gothic-style stone building that sits on a small rise in the middle of the city. Mui Ne is the one I would pick if you like landscapes. The dunes are best at sunrise or late afternoon, when the sand turns colour and the heat drops. Da Lat is the one to pick if you want to escape the heat altogether, since the highland air is noticeably cooler and the architecture is French. Both are long days, so go to bed early the night before and carry a light jacket for Da Lat.
