Would really appreciate input on can I do Petra, Wadi Rum and the Dead Sea in 3 days without renting a car from people who've actually been to Jordan.

Yes, it's a classic route. Take the JETT bus from Amman to Petra (about 3 hours), then a shared taxi or day tour to Wadi Rum, and finish in Madaba or at the Dead Sea before returning to Amman. Book a night in a Bedouin camp in Wadi Rum, it sells out on weekends.
